Jayden Ong | Little Collins

Jayden Ong Wines is a small, first generation, family owned and operated winery producing cool climate, single block wines for One Block, La Maison de Ong, Moonlit Forest, and Jayden Ong.

Their ‘Forest Garden’ is situated on Mount Toolebewong, the highest altitude vineyard in the Yarra Valley.

Jayden has a low intervention method, allowing the wines to wild ferment and only adding minimal sulfur.

One Block Chardonnay 'Gembrook'

Bright, textural and long. Mid-weight flavours and mouth feel of citrus and white stone fruit, framed by light phenolics and ripe acid.

The Swallowfield vineyard is located in the Upper-Yarra sub-region of Gembrook, much cooler than the valley floor. The chardonnay, planted in 2000 on its own rootstock, sits about 280m above sea level on a slight north facing slope, with a quartz inflected red soil profile.

Hand picked and sorted, whole bunch press for a majority of the fruit with a portion set aside for skin contact. Ambient yeast ferment and 10 months in seasoned puncheons, with no batonnage. Settled in tank for three months before bottling.

One Block Sauvignon Blanc 'Gladysdale'

Balanced, textural and delicious. This wine is not your usual new world expression. It will enjoy being decanted in its youth and develop more complexity with medium-term patience in the cellar.

The Willowlake vineyard is located in the cool Upper Yarra Valley sub-region. The A7 block was planted in 1983 on its own rootstock. It sits about 250m above sea level on a north facing aspect, with a friable clay loam volcanic soil.

Hand picked and sorted, a majority whole bunch press straight to barrel, with the remainder left on skins for 5 days. Ambient yeast ferment and 8 months in seasoned oak, with no batonnage. Settled in tank for three months before bottling.

One Block Syrah 'Yellingbo'

Bright and elegant cool climate Syrah.

The highly regarded Tibooburra Vineyard is located in the south-eastern central part of the Yarra Valley, Victoria. The ‘Yellingbo’ part of the vineyard was planted in 2001 to shiraz, on its own rootstock. It sits about 240m above sea level on a south-west facing slope. With a black top soil, it is supported by yellow duplex subsoil.

Hand picked and sorted, destemmed fruit fermented separately to whole bunches (48%). Gentle pumping over initially with an ambient yeast ferment and approximately 28 days on skins. Hand plunged. Pressed off to seasoned oak. No added sulphur and only 40ppm at bottling. Bottled unfined & unfiltered August 2022.

La Maison de Ong Syrah 'The Hermit'

Warm vintage, with beautiful fruit intensity. Bolstered by ripe tannins and just perceivable oak, this gently spicy, dark fruited syrah is a joy to behold.

An old hermit walked around the village and surrounding area day and night, even in the daylight he still carried a lit lantern. One day the villagers had enough curiosity to ask him “Sir, why do you carry your lantern lit in the daylight?” He said, “Because I’m searching for an honest man.”
